Honey Barbecue Chicken, Grandma Jean's Potato Salad

Hi everyone!

Tomorrow we're having Honey Barbecue Chicken for dinner. This isn't really much of a recipe but it was in Southern Living so I figure it was worthy of posting. On the side I'm serving Grandma Jean's Potato Salad. This is a Neely recipe from the Food Network. We'll also be having corn.

Honey Barbecue Chicken
Amy (amylz) Makes 8 to 10 servings
Southern Living, SEPTEMBER 2004

Vegetable cooking spray
6 bone-in chicken breasts
8 chicken drumsticks
Honey Barbecue Sauce

Coat food grate with cooking spray; place on grill over medium-high heat (350 to 400). Place chicken on grate, and grill, covered, 5 to 10 minutes on each side. Reduce heat to low (under 300); grill, covered, 40 to 50 minutes for breasts and 30 to 40 minutes for drumsticks or until done. Brush with 1 cup Honey Barbecue Sauce during last 10 minutes of grilling. Serve with remaining 1 cup sauce.

Grandma Jean's Potato Salad

The Neelys 6 servings

5 large red potatoes, peeled and cubed
2 ribs celery, chopped
1/2 large onion, chopped
3 hard-boiled eggs, 2 chopped and 1 sliced
2 heaping tablespoons sweet pickle relish, drained
1/2 cup salad dressing, (recommended: Miracle Whip)
3 tablespoons yellow mustard
1 tablespoon sugar
Paprika, for garnish
Salt

Boil cubed potatoes until they are tender. Drain and cool. In a large bowl add celery, onion, 2 eggs and pickled relish. Add the salad dressing, yellow mustard and sugar. Stir well. Place the sliced egg on top of potatoes and sprinkle with paprika and salt. Let the potato salad chill in the refrigerator for 2 1/2 hours or overnight.

Grandma Jean's Potato Salad - This was ok as far as potato salads go. There was nothing super impressive about it. If you like a very traditional potato salad, you will like this. My kids loved it!

Honey Barbecue Chicken - This was great. My husband wasn't around so I just baked this in the oven. I used boneless chicken breasts and I sprinkled them with some McCormick BBQ seasoning. I baked about 15 minutes, flipped and then poured the BBQ sauce over the breasts and cooked about 8 more minutes. My 5 year old ate 2 pieces and wanted more but there wasn't enough. This was simple and classic and good!
