Here are the sandwiches for this week:
Hot Ham and Pepper Cheese Hoagies

Makes 4 servings
4 - hoagie buns, split lengthwise
1/4 - cup spicy mustard
1/4 - cup mayonnaise
1 - package maple & brown sugar glazed ham
4 - slices Pepper Jack cheese, 4 ounces
1/2 - cup shredded lettuce
1 - tomato, thinly sliced
Preheat oven to 350 F. Spread inside surfaces of buns with mustard and mayonnaise. Next, layer ham and cheese on bottom halves of buns. Top with lettuce and tomato. Place remaining bun half on top. Wrap hoagies in foil, place in oven and heat for about 15 minutes or until cheese is melted.
Chicken Club Sandwich

Makes 6 servings
1/2 cup mayonnaise or salad dressing
18 slices bread, toasted
12 lettuce leaves
6 slices (3 ounces each) cooked chicken
18 slices tomato (3 medium)
12 slices bacon, crisply cooked and drained
1/2 teaspoon salt
1/8 teaspoon pepper
Spread mayonnaise over 1 side of each slice of toast. Place 1 lettuce leaf and 1 chicken slice on each of 6 toast slices. Cover with second toast slice, mayonnaise side up. Top with lettuce leaf, 3 slices tomato and 2 slices bacon. Sprinkle with salt and pepper. Cover with third toast slice, mayonnaise side down; secure with wooden picks. To serve, cut diagonally into triangles.

Chicken Club Sandwiches - This was a good "club" sandwich. I did add some swiss cheese and skipped the mayo but used some ranch. Overall, a very tasty lunch. I think my kids would love this. Oh wait, I subbed pickles for the tomatoes too. There is just something about a piece of toast in the middle of your sandwich that really kicks it up a notch though. They are kind of hard to bite in to though. I don't love that!
Hot Ham and Pepper Cheese Hoagies - I always say hot ham with any kind of melted cheese is yummy. Normally I don't even like ham but for some reason this way, it's good. I did omit the mayo and just used mustard. I wouldn't say this was anything super impressice but on a cold day it really hit the spot. I did leave off the tomato and lettuce because that just seemed wrong.
