Tangy Turkey and Swiss Sandwiches, Jalapeno Popper Grilled Cheese

Hi everyone!

Here are the sandwiches for this week:

Tangy Turkey and Swiss Sandwiches

All Recipes Yields: 4 servings

3/4 cup chopped red onion
1 tablespoon dried thyme
1/2 cup mayonnaise
1/4 cup coarse-grain brown mustard
8 slices country style French Bread
6 tablespoons butter, softened
1 pound thinly sliced roast turkey
8 slices tomato
8 slices Swiss cheese

1. In a small bowl, stir together the red onion, thyme, mayonnaise and mustard. Spread some of this mixture onto one side of each slice of bread. Spread butter onto the other side of the slices of bread.
2. Heat a large skillet over medium heat. Place 4 slices of the bread into the skillet with the butter side down. On each slice of bread, layer 1/4 of the sliced turkey, then 2 slices of tomato, and top with 2 slices of Swiss cheese. Place remaining slices of bread over the top with the butter side up. When the bottoms of the sandwiches are golden brown, flip over, and cook until golden on the other side.

Jalapeno Popper Grilled Cheese

2 jalapeno peppers, cut in half lengthwise and seeded
2 slices sour dough bread
1 tablespoon butter, room temperature
1 tablespoon cream cheese, room temperature
1/4 cup jack and cheddar cheese, shredded
1 tablespoon tortilla chips, crumbled

Place the peppers on a baking sheet with the cut side facing down. Place the baking sheet on the top shelf in the oven and broil until the outer layer of the skin has blackened, about 8-14 minutes. Place the peppers in a zip-lock bag or other sealable container, seal and let them cool until you can handle them, about 20 minutes. Remove the skins from the peppers. The skins should easily "pinch" off. Assemble sandwich and grill until golden brown and the cheese has melted, about 2-3 minutes per side.

Tangy Turkey and Swiss Sandwich - I did like this but I would definitely cut back on the thyme next time. It was just too much for me. I thought the onion was perfect even though it seemed like a lot at first. The only change I made was to leave off the tomato. Overall, a good sandwich!

Jalapeno Popper Grilled Cheese - I thought this was good but I wasn't totally blown away or anything. I mean, grilled cheese and jalapenos are two of my favorite things so I was happy but I doubt I'll take the time to make these again.
